I know this is an old post and you have already fixed dinner that night..but here are a couple of quick high protein recipes I fix pretty often - kid approved!
Hamburger Noodle Casserole
1 lb ground beef 1 can cream of chicken soup about 2 cups of pasta (small shells work great)
Preheat oven to 400F
Do the following at the same time:
Prepare soup according to directions. Brown ground beef Boil noodles to desired tenderness.
Put all ingredients in a casserole dish. Make sure that the meat and pasta are covered with the soup and as evenly distributed as possible. Cover with aluminum foil and bake for 45 minutes.
Chicken and Rice Casserole
1 lb chicken breast (if in a real big hurry canned chicken will work - but actually cooking it yourself is better for you) 1 can cream of chicken soup 1 box of wild rice (quick rice works fine)
Preheat oven to 400
At the same time
Cook chicken (I usually boil mine for about 20 minutes on med high)
Prepare soup according to directions.
Prepare rice according to directions.
Mix all ingredients in a casserole dish making sure chicken and rice are coated and evenly distributed. Cover with aluminum foil and bake for 30 minutes. (If rice was still very wet..it might take 45 minutes or so)
